Background
This miso butter beans spread is made similar to hummus, so you can serve it with falafel, grilled meat and fish in a wrap or pita bread too. I prefer serving it as a paté on crostini or as a dip with crudites.
Ingredients
- 1 tin butter beans
- 1 Tbsp tahini
- 1 clove of garlic
- 2 tsp white miso paste
- Dash of soy sauce
- Juice of ½ lemon or lime
- 1 handful of coriander leaves
- Salt & pepper
Instructions
- Drain the butter beans and put them in a small food processor.
- Add all other ingredients and whiz until get a creamy, slightly textured paste.
- Add some water or more lemon juice if it’s too thick.
- Taste and adjust the seasoning, tahini and lemon juice to your liking.
- Keep refrigerated until serving.
