Ingredients: 1 tin butter beans; 1 Tbsp tahini; 1 clove of garlic; 2 tsp white miso paste; Dash of soy sauce; Juice of ½ lemon or lime; 1 handful of coriander leaves; Salt & pepper

Background

This miso butter beans spread is made similar to hummus, so you can serve it with falafel, grilled meat and fish in a wrap or pita bread too. I prefer serving it as a paté on crostini or as a dip with crudites.

Ingredients

1 tin butter beans
1 Tbsp tahini
1 clove of garlic
2 tsp white miso paste
Dash of soy sauce
Juice of ½ lemon or lime
1 handful of coriander leaves
Salt & pepper

Instructions

Drain the butter beans and put them in a small food processor.
Add all other ingredients and whiz until get a creamy, slightly textured paste.
Add some water or more lemon juice if it’s too thick.
Taste and adjust the seasoning, tahini and lemon juice to your liking.
Keep refrigerated until serving.
