Chipotle Glazed Roast Beef
Background
This chipotle glazed roast beef is a bold and flavour-packed twist on the classic Sunday roast. The smoky heat of chipotle, balanced with citrusy lime and warm spices, creates a beautifully caramelised crust while keeping the beef juicy and tender inside. It’s an easy way to elevate a traditional roast without complicated techniques or long preparation time.
Slightly spicy but well balanced, this dish pairs particularly well with rice, sweet potatoes, mash or roasted vegetables, making it suitable for both Sunday lunch and midweek roast dinners. Any leftovers are excellent sliced cold in sandwiches or salads, making it a practical as well as impressive centrepiece.
Ingredients
- 1 beef joint (about 600 g)
- 1 red onion, halved
- 1 lime, sliced
- To serve: chopped coriander or flat-leaf parsley, to serve
- For the glaze:
- 1 tsp chipotle paste
- 1 Tbsp olive oil
- 1 tsp dried oregano
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp garlic powder
- Salt and freshly ground black pepper
- Juice of 1 lime
Instructions
- Remove the beef from the fridge and place it on a rack. Leave at room temperature for 30 minutes.
- Preheat the oven to 200°C.
- In a small bowl, mix all the glaze ingredients until well combined.
- Brush the glaze generously all over the beef joint.
- Arrange the lime slices in a roasting tin and place the beef on top. Add the onion halves around the meat.
- Roast in the oven for 20 minutes, then reduce the temperature to 175°C.
- Turn the beef over and continue roasting for another 20–30 minutes, depending on how well done you prefer it.
- Transfer the beef to a plate, cover loosely with foil and rest while you make a gravy or jus from the roasting juices.
- Carve the beef and serve with the pan juices and a scattering of chopped herbs.
