Background
Coconut and Jaggery laddu is a desert and this recipe is from southern Indian state of Andhra Pradesh.
This laddu can be made with sugar or jaggery. I personally prefer the Jaggery ones, as they are healthier and tastier with a wonderful aroma.
Ingredients
- 1.5 cups grated coconut
- ΒΎ cup grated jaggery
- ΒΌ tsp green cardamom powder
- 2 tsp clarified butter or ghee
- ΒΌ cup water
Instructions
- Take a pan and add jaggery and water to it. Melt it on a low heat.
- Take a heavy bottom pan and add ghee and heat it. Add the grated coconut and fry evenly for 2 to 3 minutes.
- Pass the jaggery syrup through a filter to discard impurities.
- Add cardamom powder to the jaggery and mix well.
- Add the jaggery syrup to the coconut and cook till the moisture evaporates and you begin to see strings in the mixture. This could take about 3 to 4 minutes after you add the jaggery syrup.
- Set the mixture aside to cool.
- Once cool, grease your palms and take small portions of the mix and make balls.
- These are to be consumed within a week.
