Coconut and lime porridge
Background
Porridge is a super healthy dish for breakfast, particularly if you make it with plant-based milk. You can add other healthy elements to it such as nuts, dried fruits or freshly made compote. This coconut and lime porridge is vegan, gluten-free and zingy.
Ingredients
- 1 cup rolled porridge oats (gluten-free, if needed)
- 1.5 cups coconut milk (not tinned)
- ½ cup Fresh coconut shavings
- 2 Tbsp shredded coconut, unsweetened
- 2 Tbsp agave syrup
- 1 lime, juiced and zested
Instructions
- Put the porridge and coconut milk in a saucepan. Bring to a simmer and cook for 10 minutes over low heat. It should be creamy, so add a little more coconut milk, if needed.
- Turn off the heat, stir in the desiccated coconut, then put a lid on and rest for 5 minutes.
- Meanwhile, cut the coconut shavings into tiny bits and zest the lime then squeeze the juice out of it.
- Stir the lime juice into the porridge together with some agave syrup.
- Spoon the porridge into two bowls, divide the fresh coconut pieces between them, then sprinkle some lime zest on top. Drizzle with more agave/maple syrup over them, if you like is extra sweet.
