Cod with roasted vegetables

Background
If you want an easy, healthy fish dish, try this cod with roasted vegetables. It’s low-cal and low-carb, yet filling and yummy. Serve it with a crispy salad, brown-rice, couscous, quinoa or healthy flat-bread.
Ingredients
- 1 red onion
- 8 cherry tomatoes
- 1 tsp Italian herb mixture
- 1 courgette
- 1 red bell pepper
- 1 yellow bell pepper
- Olive oil
- Red wine vinegar
- 2 cod fillets
- Lemon juice
- Fresh herbs of your choice, dill, parsley, basil etc
Instructions
- Preheat the oven 190°C.
- Cut the peppers into chunks, the courgette into rings, the onion into thin wedges. Arrange them in a baking tray, then drizzle with oil & vinegar, season with salt and pepper, scatter the dried herbs an top.
- Roast in the oven for about 25 minutes until brown, turning them over once or twice.
- Meanwhile, cut the cod into bite-sized chunks.
- When the vegetables are tender, take the dish out of the oven and arrange the cod pieces on the top. Drizzle with some oil & lemon juice, season with salt and pepper, then put the dish back in the oven for about 5 minutes. Don’t overcook the fish!
- Serve warm, with fresh herbs scattered on top.
