Couscous and cherry tomato salad
Background
This couscous and cherry tomato salad is ready in just 10 minutes - ideal for parties, picnics or as a side dish for grilled/barbecued lamb or chicken. You can use other nuts too - such as pistachios, almonds or pine nuts (depending on your main dish) and raisins instead of cranberries.
Ingredients
- 100g couscous
- 100g cherry tomatoes
- 50g cashew nuts
- 1 handful of mint leaves, chopped
- ½ red onion
- 50g dried cranberries
Instructions
- Pour hot water over the couscous according to the packaging instructions.
- Meanwhile, slice the onion, cut in half the cherry tomatoes, then dry-fry the cashew nuts until golden.
- Loosen the couscous with a fork then toss with the other ingredients. Season with salt and pepper.
