Cream cheese brownies with cherries
Background
Marbled brownies are perfect for dinner parties, afternoon teas or as a nice gift to friends and loved ones. These cream cheese brownies with cherries are ideal for summer garden parties, anniversary celebrations and so on. It’s best to chill them until you're ready to serve them.
Ingredients
- 50g butter
- 100g good quality, dark chocolate ( minimum 70% cocoa content)
- 100g granulated sugar
- 3 eggs
- 50g flour
- 150g natural cream cheese
- 100g pitted, fresh cherries
Instructions
- Melt the butter and chocolate in glass bowl over a pan of simmering water, then cool.
- Add half of the sugar, combine, then 2 eggs and finally the flour. Mix until you get a smooth batter.
- In another bowl, beat the cream cheese with the remaining egg and sugar.
- Preheat the oven to 180 C degrees.
- Grease and line a 20x20-cm baking tray with baking paper. Add dollops of the two mixtures, alternating, then stir with a skewer or cocktail stick to make swirls.
- Push the cherries into the batter.
- Bake in a for approx. 30 minutes until the top is golden, but the middle is still a bit gooey.
- Let the cake cool in the tin, then transfer it to a wire rack. Let it cool completely.
- Put it in the fridge for an hour before slicing it into 9 big or 16 small squares.
