Creamy Dolcelatte spaghetti

Background
I love cheese pasta - it’s my ultimate comfort food! Given that it takes only 10 minutes to make, this creamy Dolcelatte spaghetti is my perfect lunch on busy/lazy days. I serve it with a rocket salad et voilà! I use gluten-free spaghetti but you can make it with any kind of pasta.
Ingredients
- 50g Dolcelatte
- 2-3 Tbsp double cream or crème fraîche
- 1 handful of parsley, chopped
- 1 Tbsp toasted pine nuts
- ½ tsp grated lemon zest
- 100g spaghetti (can be gluten-free)
Instructions
- Cook the pasta according to the packet instructions.
- Meanwhile remove the rim of the cheese, and crumble the cheese into a small saucepan. Add the crème fraîche/cream, lemon zest, then gently heat it until the cheese melts and the sauce starts to bubble.
- When the pasta is ready, using a tong, move it into the cheese sauce and toss well.
- Mix in the parsley and serve with the pine nuts scattered on top.
- Season with plenty of ground pepper.
- Serve warm.
