Creamy new potatoes

Background
These creamy new potatoes are made with crème fraîche, lemon and mint so the result is a zingy, fresh potato salad. It's perfect for summer barbecues, parties and picnics - as it can be made well in advance. It takes only 20 minutes to make this great dish!
Ingredients
- 500g new potatoes
- 6 Tbsp crème fraîche
- zest and juice of ½ lemon
- 3 Tbsp very finely chopped fresh mint
- 1 red chilli, sliced
Instructions
- Scrub the potatoes then put them in a pan of salted cold water. Bring to the boil, then cook until tender and drain. Leave them to cool slightly in the colander, then cut them in half.
- Put the in a bowl and mix with the crème fraîche, mint, lemon zest and juice.
- Season to taste with salt and freshly ground black pepper.
- Serve with some mint scattered on the top and a few slices of chilli if you like it to have a kick!
