Background

These creamy new potatoes are made with crème fraîche, lemon and mint so the result is a zingy, fresh potato salad. It's perfect for summer barbecues, parties and picnics - as it can be made well in advance. It takes only 20 minutes to make this great dish!

Ingredients

500g new potatoes
6 Tbsp crème fraîche
zest and juice of ½ lemon
3 Tbsp very finely chopped fresh mint
1 red chilli, sliced

Instructions

Scrub the potatoes then put them in a pan of salted cold water. Bring to the boil, then cook until tender and drain. Leave them to cool slightly in the colander, then cut them in half.
Put the in a bowl and mix with the crème fraîche, mint, lemon zest and juice.
Season to taste with salt and freshly ground black pepper.
Serve with some mint scattered on the top and a few slices of chilli if you like it to have a kick!
