Curried cashew nuts

Background
These curried cashew nuts are perfect for snacking during the day or you can serve them as nibbles with aperitif or at a party all year round. Itβs super easy to make Β and itβs vegan, dairy-free, gluten-free and sugar-free too!
Ingredients
- 2 Tbsp groundnut (peanut) oil
- 2 Tbsp chopped garlic
- 200g cashew nuts
- 1 Tbsp soy sauce
- 1 Tbsp curry por
- Β½ tsp Chinese five spice
- Salt& pepper
Instructions
- Preheat the oven to 140 Β° C.
- Heat the wok on the stove. When hot, add the oi and stir-fry the garlic and cashew nuts for 30 seconds. Add the soy sauce and cook for about 2 minutes until the soy sauce has completely reduced.
- Turn off the heat, add the curry powder, five-spice mixture, salt &pepper then combine. Transfer to a baking sheet, arrange the nuts evenly, then bake for 15 minutes or until light brown and crispy.
- Let them cool before serving.
