Easy custard tarts
Background
I love Portuguese custard tarts – they are perfect for celebrating most occasions, ideal for afternoon teas and picnics. Most importantly they are super easy to make! These easy custard tarts are made with shop bought or home-made leftover vanilla custard. It’s important that your ready-made custard is thick and good quality (I used Madagascan extra thick custard). If it's not - add some vanilla paste and cornflour to thicken it up! Then you can mix in some cinnamon powder, lemon/orange zest etc, depending on the occasion or season. I make mine with cinnamon in the winter; lemon zest in the spring. In the summer I add some berries or dried apricots and nuts to the filling! I've made these tarts with gluten-free and normal puff pastry - both are very tasty!
Ingredients
- 1 sheet ready-rolled puff pastry (I used gluten-free)
- 1 egg yolk
- 1 cup ready-made vanilla custard
- 1 tsp cinnamon powder or grated zest of 1 lemon/orange
Instructions
- Heat the oven to 180°C.
- Lightly grease a shallow muffin tin or scone tin. Cut the pastry into circles, using a glass or cookie cutter ( big enough to fit in the tin holes). Press the disks into the wholes.
- Mix the custard with the egg yolk and cinnamon (or citrus zest).
- If you're using fruits/dried fruits, scatter a couple of pieces into each case.
- Pour the custard into the pastry cases and bake for 15-20 mins, until golden.
- Transfer the tarts to a wire rack to cool.
- Serve at room temperature, dusted with icing sugar, if liked.
