Ingredients: ½ large jar black, pitted olives; ½ large jar green pitted olives; 3 cloves of garlic, minced; 1 tsp dried oregano or mixed Italian herbs; Chilli flakes to taste or 1 fresh chilli (halved) ,; 4 tbsp Olive oil; 2 tbsp White wine or cider Vinegar; Salt & pepper

Background

I love olives! Recently I realized that, over the years, I've spent a small fortune at various deli counters unable to resist the olives on display, and I decided to have a go myself. This easy marinated mixed olives recipe really is so easy and so delicious that I'm really regretting all the money I could have saved!

Ingredients

½ large jar black, pitted olives
½ large jar green pitted olives
3 cloves of garlic, minced
1 tsp dried oregano or mixed Italian herbs
Chilli flakes to taste or 1 fresh chilli (halved) ,
4 tbsp Olive oil
2 tbsp White wine or cider Vinegar
Salt & pepper

Instructions

Thoroughly mix all the ingredients together in a large bowl.
Have a taste and add some more of any of the ingredients you think need to be - or indeed add any other herb, spice or sauce that suits you.
Put back into one of the large jars. Leave overnight, if possible, in the fridge to marinate.
It's best to keep them in the fridge but you'll probably find you get through them pretty quickly!
