Background
I love olives! Recently I realized that, over the years, I've spent a small fortune at various deli counters unable to resist the olives on display, and I decided to have a go myself. This easy marinated mixed olives recipe really is so easy and so delicious that I'm really regretting all the money I could have saved!
Ingredients
- ½ large jar black, pitted olives
- ½ large jar green pitted olives
- 3 cloves of garlic, minced
- 1 tsp dried oregano or mixed Italian herbs
- Chilli flakes to taste or 1 fresh chilli (halved) ,
- 4 tbsp Olive oil
- 2 tbsp White wine or cider Vinegar
- Salt & pepper
Instructions
- Thoroughly mix all the ingredients together in a large bowl.
- Have a taste and add some more of any of the ingredients you think need to be - or indeed add any other herb, spice or sauce that suits you.
- Put back into one of the large jars. Leave overnight, if possible, in the fridge to marinate.
- It's best to keep them in the fridge but you'll probably find you get through them pretty quickly!
