Egg fried rice

Background
Egg fried rice is very simple to make and super delicious. Make it on busy days, and impress your loved ones with a fabulous looking meal. The recipe is inspired by Chinese version of fried rice, and is massively popular all across India.
Ingredients
- 4 cups cooked long grain rice
- 2 Tbsp oil
- 4 garlic cloves finely chopped
- 2 cups chopped vegetables (bell pepper, green beans, and carrots)
- 4 eggs whisked
- 2 Tbsp chopped spring onion
- 1 tsp black pepper powder
- 2 tsp vinegar
- 1 Tbsp soy sauce
- Salt to taste
Instructions
- Heat oil in a large wok on high heat. Add garlic and stir fry for few minutes.
- Add vegetables and salt. Stir fry for 3 minutes or until veggies are tender but crunchy.
- In another pan add 2 tsp oil and whisked eggs. Season with salt. When the eggs start to set, break it up to make scrambled eggs.
- Season with black pepper.
- Transfer the scrambled egg and cooked rice to the wok. Add soy sauce and vinegar and stir fry for 3 minutes.
- Remove from heat and transfer to serving bowl.
- Garnish with spring onion and serve hot.
