Background

Egg fried rice is very simple to make and super delicious. Make it on busy days, and impress your loved ones with a fabulous looking meal. The recipe is inspired by Chinese version of fried rice, and is massively popular all across India.

Ingredients

4 cups cooked long grain rice
2 Tbsp oil
4 garlic cloves finely chopped
2 cups chopped vegetables (bell pepper, green beans, and carrots)
4 eggs whisked
2 Tbsp chopped spring onion
1 tsp black pepper powder
2 tsp vinegar
1 Tbsp soy sauce
Salt to taste

Instructions

Heat oil in a large wok on high heat. Add garlic and stir fry for few minutes.
Add vegetables and salt. Stir fry for 3 minutes or until veggies are tender but crunchy.
In another pan add 2 tsp oil and whisked eggs. Season with salt. When the eggs start to set, break it up to make scrambled eggs.
Season with black pepper.
Transfer the scrambled egg and cooked rice to the wok. Add soy sauce and vinegar and stir fry for 3 minutes.
Remove from heat and transfer to serving bowl.
Garnish with spring onion and serve hot.
