Feta omelette with green beans and frankfurters
Background
For a weekend breakfast or brunch omelette is the ideal dish to serve. It’s ready within 15 minutes, and you can use up all sorts of leftovers like I did for this feta omelette with green beans and frankfurters. Serve it with crusty bread or toasted bagel.
Ingredients
- ½ red onion
- 3 frankfurters
- ½ tsp oregano
- 1 handful green beans
- 3 eggs, beaten
- 1 handful spinach & rocket leaves
Instructions
- Thinly slice the onion. Cut the frankfurters and green beans into 3 pieces.
- Lightly beat the eggs in bowl.
- Heat the oil in a frying pan and gently sauté the onion for 5 minutes, then add the oregano, green beans and frankfurters and cook for 2 minutes.
- Pour over the egg, crumble the feta on top and cook over low heat until the surface has set.
- Scatter the spinach & rocket leaves on top and serve.
