Fried potatoes with capsicum

Background
This is a dry vegetable recipe made with a few spices which is famous in the state of Punjab. It is a very simple and easy recipe to make.
Ingredients
- 3 Medium capsicum, diced
- 3 Medium potatoes, peeled and diced
- ½ tsp Turmeric
- ½ tsp Red chilli powder
- 1 tsp Garam masala
- 1 tsp Dry mango powder
- 2 Tbsp Oil
- Salt as required
Instructions
- Heat oil in a pan on medium heat and add the potatoes for frying.
- Once the potatoes are half cooked, add the capsicum.
- Saute both the veggies on low flame.
- Add turmeric, red chilli powder and salt and mix.
- Fry the vegetables in low flame without lid for 2-3 minutes.
- Now cover the pan with a lid and cook until the vegetables soft.
- Add garam masala and dry mango powder and mix.
- Serve hot with rotis.
