Frogs’ legs Provencal

Background
Frogs’ legs Provencal is a famous French dish, which is very easy to make at home. In some supermarket you can now buy cleaned and ready-to-cook frozen froggy legs, so why don’t you try this recipe? You can use white wine instead of lemon juice, if you like. Also, if gluten is an issue - use rice flour, if dairy is a problem, just use olive oil. It’s absolutely delicious and perfect for parties, dinner parties or as nibbles with drinks.
Ingredients
- 15-20 pairs Frogs legs
- 2 Tbsp butter
- 2 tsp olive oil
- 3 cloves garlic minced
- juice of 1 lemon
- 2 Tbsp chopped parsley
Instructions
- Version 1: wipe the frog legs dry and season with salt and pepper. Dust them with flour, then shake the excess off.
- Melt the butter in a heavy-based frying pan, add the oi. When hot fry the frogs legs until light brown on both sides. Add the garlic, cook for half a minute, then squeeze in the lemon juice and sprinkle with parsley.
- Turn off the heat, put a lid on a and let it steam for 1-2 minutes. Serve hot.
- Version 2: follow the above steps of seasoning, dusting then frying the legs in the oil. Transfer them onto a plate lined with paper kitchen towels.
- Fry the garlic in some butter, when sizzles, pour over the frog legs, drizzle with lemon juice and sprinkle with fresh parsley. Serve hot.
Tips
Soak the frogs’ legs in milk or beer for about 30 minutes for the meat to be more succulent.Categories
