Garlic spinach with prawns

Background
This garlic spinach with prawns is a fantastic starter or you can serve it as a tapa with a glass of aperitif. You could also serve it for a quick & easy lunch with toasted sourdough bread.
Ingredients
- 3 garlic cloves, sliced
- 3 spring onions, sliced
- 2 Tbsp olive oil
- 250g baby spinach
- ½ tsp dried chilli flakes
- 1 lemon, juiced
- 150g prawns, peeled
Instructions
- Rinse and drain the spinach leaves, set aside.
- Pour the oil in a frying pan, add the spring onion and garlic slices and turn on the heat.
- When they begin to turn brown, add the chilli and spinach leaves - a handful at a time, then stir. Add the lemon juice, cover with the lid and simmer for 2-3 minutes.
- Put the prawns on top of the wilted spinach, cover with the lid and steam for 2-3 minutes, until the prawns have changed colour. If you’re using ready cooked prawns, just warm them through for a minute or so.
- Take the pan off the heat, rest for a couple of minutes. Season to taste, then serve with paprika dusted on top.
