Gluten-free and dairy-free cherry clafoutis

Background
Clafoutis a traditional French dessert, made with black cherries and flan-like batter. This gluten-free and dairy-free cherry clafoutis tastes just as good as the original version, as it’s made with ground almonds and almond milk (providing the nutty flavour). Serve it lukewarm, with ice-cream, or let it cool and cut it into squares.
Ingredients
- 2 cups pitted fresh cherries
- 3 large eggs
- 1 cup almond milk
- ½ cup sugar
- ½ cup ground almond
- 1 cup gluten-free flour mixture
- 1 Tbsp cornflour
- 2 Tbsp melted dairy-free spread
- 1 tsp vanilla extract
- ½ tsp cinnamon
- Pinch of salt
- Handful of almond flakes
- To serve: icing sugar
Instructions
- Preheat oven to 180°C.
- Grease a baking dish with margarine.
- In a blender, combine the eggs, almond milk, sugar, the flours, ground almond, margarine, vanilla extract, cinnamon and salt. Blend until you get a smooth batter – the consistence should be similar to a thick pancake batter.
- Arrange cherries in the greased baking dish, then pour the batter over them.
- Bake for about 25-30 minutes or until the top is golden. You can scatter some almond flakes on the top after 15 minutes of baking.
- Cool for 10 minutes before slicing it into wedges or squares.
- Dust with icing sugar just before serving.
