Background
If you want a super easy yet very pleasing gluten-free dessert this recipe ticks all the boxes! No need to cook anything, it can be assembled in a few minutes and it can be as boozy as you want! Ideal for special occasions such as Valentine’s day, Mother’s day or anniversaries. I made it with sour cherry and brandy cookies. For a really boozy version, marinate the berries in some cherry brandy overnight, then drain. Use the brandy for the cream.
Ingredients
- 2 cup fruits of the forest, defrosted
- 150g gluten-free cookies of your choice
- Cherry brandy (optional)
- 100g mascarpone
- 1 Tbsp sugar
- 200g double cream
Instructions
- Put a few pieces of fruits aside for decoration.
- Using a rolling pin, crush the cookies between a tea towel and divide half of this equally between 4 glasses. Scatter some fruits on top.
- Whip lightly the mascarpone. Spoon some over the fruits.
- Whip the cream with the sugar and the brandy (if used) until light and fluffy, then spoon half of it over the fruits.
- Repeat the layering of crumble-fruits-mascarpone-whipped cream. Chill until serving.
- Garnish with some berries and the remaining crumble.
