Gluten-free vegan coconut banana bread
Background
Banana bread is one the easiest cake to bake at lazy weekends. To make this gluten-free vegan coconut banana bread only requires one bowl and one tin - so there won’t be much washing-up either.
Ingredients
- 3 small ripe bananas
- ½ cup coconut sugar
- 2 cups gluten free self-raising flour
- ½ cup coconut flour
- ½ cup desiccated coconut
- ⅓ cup oil
- 1 cup coconut milk
- Juice of ½ lime
- Grated zest of 1 lime
- For the icing:
- ½ lime, juiced
- 3 Tbsp icing sugar
- 2 Tbsp desiccated coconut
Instructions
- Preheat the oven to 170°C.
- Mash the bananas with a fork, then add all the other ingredients and mix well.
- Line a loaf tin with parchment paper or paper basket.
- Tip the batter into the tin, spreading it out evenly.
- Bake the cake tin in the middle of the oven and for approx. 60-80 minutes until golden and an inserted skewer comes out clean.
- Let it cool in the tin for 5 minutes then transfer it to a wire rack.
- Make the icing by combining the lime juice with icing sugar and desiccated coconut. Spread this over the cake and let is set before slicing it.
- Let it completely, before serving.
