Gluten-free, vegan mincemeat pinwheels
Background
Mincemeat can be used for many lovely treats, not just for mince pies. It’s best to use good quality mincemeat - actually, it’s so easy to make your own (see mincemeat recipes). I made these Gluten-free, vegan mincemeat pinwheels with sour cherry and pear mincemeat - they were super yummy and everyone with milk & gluten allergies could enjoy them!
Ingredients
- 1 gluten-free puff ready-rolled pastry sheet
- 1 jar good quality mincemeat
- 2 Tbsp cherry or sour cherry jam
- Icing sugar
Instructions
- Pre-heat oven to 190C. Line a baking tray with parchment paper.
- Unroll the pastry sheet. Mix the jam with the mincemeat, then spread evenly over the pastry.
- Roll up from the longest side - similarly to a swiss roll. Chill in the fridge for 20 minutes, if time allows.
- Cut the roll into 1.5 cm slices and place them on the tray.
- Bake for bout 10-12 minutes until golden.
- Transfer them to a wire-rack to cool.When cooled, dust with a icing sugar.
