Gnocchi with green pea and dill pesto

Background
This Gnocchi with green pea and dill pesto is lovely vegan dish that’s rather filling too. You can use gluten-free or home-made gnocchi, if preferred. Serve it with a crispy salad.
Ingredients
- 1 pack gnocchi (300g)
- 2 cups frozen green peas
- 1 large or 2 small garlic clove
- 1 Tbsp Balsamic vinegar
- 2 tsp olive oil
- Salt& pepper
- 2 Tbsp chopped dill (or more)
- 2 Tbsp pine nuts
Instructions
- Put the peas in a pan of water. Bring to the boil and cook for 3-5 minutes.
- Drain, but keep a little of the cooking water. Rinse the peas under cold water, then put half them in a small food processor, the other half back into the pan and keep warm.
- Finely chop the garlic and dill then add these to the food processor.
- Add the balsamic vinegar, pine nuts and salt&pepper.
- Whiz until you get a smooth paste. If it’s too thick, add some of the cooking water.
- Cook the gnocchi in a pan of boiling water. When they come up to the surface of the water, remove them with a slotted spoon and add them to the resting peas in the pan.
- Add the pea pesto and combine well.
- Taste, and season to your liking.
- Serve with some dill leaves scattered on top.
