Gnocchi with sweet potato sauce and peas
Background
I love gnocchi! I know it’s not too hard to make your own but I like to keep some emergency ready-to-cook portions in the pantry for super quick meals. I also keep home-made pasta sauce in the freezer, which I can just warm up and it’s ready to serve. For this vegan gnocchi with sweet potato sauce and sweet peas I used shop-bought gluten-free spinach gnocchi, frozen peas and my own sweet potato sauce. Ingredients
- ½ portion of sweet potato pasta sauce
- 250g gnocchi (ready-made), can be gluten-free
- 1 cup frozen peas
- 2 Tbsp chopped mint, basil or parsley
- Vegan cheese, grated (optional)
Instructions
- Cook the gnocchi according to the packet’s instructions. When the gnocchi float to the surface, remove them with a slotted spoon to bowl. Add the peas to the cooking water and cook for 3—5 minutes, then drain, keeping some of the cooking water.
- Warm the pasta sauce in a shallow pan, add some of the cooking water. Add the peas and gnocchi to warm through, then fold in the herbs.
- Serve immediately with grated (vegan) cheese if liked.
