Background

These garlic & lemon sautéed green beans with feta are perfect on the side of grilled/barbecued/pan-fried meat and fish. It’s a zingy and refreshing dish, so it’s ideal for Summer meals. Alternatively, serve it as a vegetarian main dish with brown rice, couscous or pasta.

Ingredients

2 cloves of garlic
1 Tbsp olive oil
100g green beans
Juice of 1 small lemon
50g feta cheese, crumbled

Instructions

Thinly slice the garlic.
Heat the oil in frying pan and cook the garlic for 30 seconds - don’t let it burn!
Add the beans, lemon juice and a splash of water. Season to taste.
Put a lid on, turn don the heat and sauté for 5 minutes until the beans are tender.
Transfer the green beans to plate and add the crumbled feta and mint leaves.
Serve warm.
