Green beans with feta

Background
These garlic & lemon sautéed green beans with feta are perfect on the side of grilled/barbecued/pan-fried meat and fish. It’s a zingy and refreshing dish, so it’s ideal for Summer meals. Alternatively, serve it as a vegetarian main dish with brown rice, couscous or pasta.
Ingredients
- 2 cloves of garlic
- 1 Tbsp olive oil
- 100g green beans
- Juice of 1 small lemon
- 50g feta cheese, crumbled
Instructions
- Thinly slice the garlic.
- Heat the oil in frying pan and cook the garlic for 30 seconds - don’t let it burn!
- Add the beans, lemon juice and a splash of water. Season to taste.
- Put a lid on, turn don the heat and sauté for 5 minutes until the beans are tender.
- Transfer the green beans to plate and add the crumbled feta and mint leaves.
- Serve warm.
