Green pea and ginger soup

Background
This green pea and ginger soup is ready in 15 minutes. It’s healthy, vegan, low-cal and low-carb and perfect immune-booster all year round. Serve it with crusty bread, flatbread or savoury scones.
Ingredients
- 1 Tbsp olive oil
- 2 garlic cloves
- 1 inch fresh ginger
- 1 onion
- 3 cups frozen peas
- Approx.750 ml vegetable stock
- 1 small handful of coriander leaves
Instructions
- Peel and roughly chop the onion, garlic and ginger.
- Heat the oil on a saucepan, then sauté the onion for 5 minutes.
- Add the ginger and garlic, then stir for a minute or so until they soften.
- Add the peas and vegetable stock then bring to the boil.
- Cook for 5 minutes.
- Add the coriander leaves and, using stick blender, process the soup until you get a smooth, silky texture.
- Serve warm.
