Grilled Asparagus with Spicy Cottage Cheese Spread

Ingredients
- 1 bunch asparagus
- 150g cottage cheese
- 3 salad onions (spring onions), finely chopped
- 1 Tbsp chopped chives (plus extra to garnish)
- 2 sundried tomatoes in oil, finely chopped
- ½ tsp chilli paste (e.g. harissa, chipotle or gochujang) - add more to taste
- ½ sourdough baguette (or bread of choice)
- 1 Tbsp olive oil
- Salt and black pepper, to taste
Instructions
- Trim the woody ends. Drizzle or rub lightly with olive oil, then season with a little salt and pepper.
- Heat a griddle pan (or barbecue) until hot. Place the asparagus on the pan and grill for 5–7 minutes, turning occasionally, until tender and lightly charred.
- Add the cottage cheese to a mixing bowl. Stir in the chopped salad onions, sundried tomatoes and chives. Mix well, then fold in the chilli paste. Adjust seasoning and spice level to taste.
- Slice the sourdough baguette and toast lightly until golden.
- Spread a generous layer of the spicy cottage cheese mixture over the toasted bread. Top with grilled asparagus.
- Sprinkle with extra chives and serve immediately, warm or at room temperature.
