Grilled corn relish
Background
I just love grilled, barbecued or griddled corn-on-the-cob! So when corn is cheap at the market I tend to buy a lot and then grill them asap. This means I find myself filling the fridge with loads of grilled corn. The easiest way to use them up is to throw together Mexican-style salsas & salads or use them in spicy stews and chillies. This grilled corn relish has a Mediterranean flavour to it that's rather interesting. It's ready within a few minutes - an ideal condiment with grilled fish and meat or as a useful sandwich/wrap filler. Also, it's perfect for picnics and parties.
Ingredients
- 1 corn on the cob (grilled or griddled)
- 1 handful of cherry tomatoes
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 Tbsp chopped basil leaves
- 1 pinch of dried chilli flakes (optional)
- Salt and pepper
Instructions
- Let the corn cool then cut off the kernels using a sharp knife.
- Cut the tomatoes into small wedges. Mix the corn kernel and tomatoes in a bowl, then add the balsamic vinegar, chilli (if used) and chopped basil leaves.
- Season with salt and pepper to your taste. Adjust the vinegar and oil too to your liking!
- If you want it to have a real kick - add a finely chopped jalapeno chilli to the salad! You can also add some chopped spring onion or shallot to it, if you like!
