Grilled halloumi and lemon
Background
I love using halloumi because it’s an excellent substitute for meat and it’s very easy to cook. This grilled Halloumi and lemon recipe can be ready in just 10 minutes - ideal for a quick & easy lunch or a snack. Serve it with a Mediterranean-style green salad - in pitta bread, if you like.
Ingredients
- 2 small lemons
- 1 tsp honey
- 2 Tbsp olive oil
- 1 clove garlic, pressed
- 250g halloumi
- 1 tsp sea salt & peppercorns
Instructions
- Preheat the grill in your oven.
- Cut one lemon half into rings, juice the other one.
- Using a pestle and mortar grind the garlic, pepper & salt, then stir in the lemon juice, oil and honey.
- Cut the cheese into 1cm thick slices, then put them on a baking tray. Brush them with the glaze. Place lemon slices on top and brush these too with the glaze.
- Bake under the hot grill for a few minutes - when the cheese is golden and the lemon is caramelised lemon, turn them over, brush with the remaining glaze, and grill for another couple of minutes until golden and caramelised.
