Healthy Vegan Fruit Cake
Background
These days it’s so easy to get vegan cakes in delis & cafes, even in supermarkets. These may be vegan but certainly not healthy - loaded with sugar, additives, artificial flavourings and so on. It’s much better to bake your own cakes, as you can control what goes in them. It’s actually very easy to make a healthy vegan fruit cake - you don’t need to be a baker! I made this one with mixed summer berries, but you can use other fruits according to the season (cherries, apricots, cranberries, plums or pineapple would work too). Alternatively, use frozen fruits (but these have to be defrosted first). You can use other dried fruits too - apricot, cranberries, dates, prunes would work. This Healthy Vegan Fruit Cake is perfect for breakfast or a morning/afternoon snack. I also recommend it for kids parties, picnics, garden-parties too.
Ingredients
- 400g chopped fruits or berries (blueberry, blackberry, raspberry etc)
- 200g oats
- 200g wholemeal or spelt flour (or gluten-free)
- 50g unsweetened desiccated coconut (optional)
- 150ml sunflower oil
- 300ml sugar-free thick fruit juice or smoothie
- 1 Tbsp maple syrup (or agave syrup)
- 100g raisins/sultanas (or other dried fruits)
Instructions
- Set the oven to 190°C. Mix the flour in a large bowl with the oats.
- Add the rest of the ingredients and gently combine.
- Tips the mixture into a round (non-stick) cake tin, spreading it out evenly.
- Bake in the oven for 30-40 minutes until light brown.
- Rest in the tin for 10 minutes, then transfer it to a cooling rack.
