Honey and Thyme Roasted Parsnips
Background
These honey and thyme roasted parsnips are a simple yet elegant side dish, perfect when you need something quick, comforting and full of flavour. The natural sweetness of parsnips is enhanced by golden honey and fragrant fresh thyme, creating beautifully caramelised edges and a tender centre. Ideal for everyday roasts as well as festive meals, this dish pairs particularly well with poultry, game and pork. For a Christmas or special-occasion twist, scatter toasted walnuts or chopped chestnuts over the top just before serving for added texture and richness.
Ingredients
- 4 medium parsnips
- 6 sprigs fresh thyme
- 2 Tbsp honey
- 1 Tbsp olive oil
- Salt and pepper
Instructions
- Preheat the oven to 180°C.
- Peel the parsnips and cut them in half lengthways (or into quarters if large).
- Parboil the parsnips in lightly salted water for 5 minutes, then drain well.
- Transfer the parsnips to a roasting tray and toss with the honey, olive oil and thyme leaves (strip the leaves from the stems).
- Season generously with salt and pepper.
- Roast for 20–30 minutes, turning once, until golden, caramelised and tender.
- Serve warm as a side dish.
