Background
Lobster is one of my favourite seafoods but I had always only eaten it in a restaurant. I thought it was time to add an Indian touch to lobster. So I tried cooking the lobster in coconut milk. It turned out to be delicious cooked in the spices and juices of the lobster.
Ingredients
- 1 whole lobster (cooked)
- 2 Medium onions (chopped)
- 1 Tomato (chopped)
- 1 tsp Ginger garlic paste
- 1 cup coconut milk
- 1 Green chilli
- Salt to taste
- 1 Tbsp oil
- 1 tsp Turmeric
- 1 tsp chilli powder
Instructions
- Heat a deep bottomed pan and add oil to it.
- When the oil is hot, add the chopped onions, green chilli and turmeric.
- Brown the onions and add the ginger garlic paste and tomatoes.
- After the tomatoes are cooked, add the chilli powder and coconut milk then cook until the oil oozes out on the sides.
- Add the lobster and cook for another 10 min (add a little water if the curry is getting dry).
- Serve hot with steamed rice.
