Indian spiced minute steak
Background
Minute steaks are really popular now as they are cheaper than sirloin and fillet steak yet can be just as tender. It really takes just couple of minutes to grill/fry/bbq them – but I find that tenderising the steak with a rub or marinade stops the meat becoming rubbery. This spiced minute steak has an Indian-flavoured rub - the longer you rest it in the marinade, the more tender the meat will be. Serve it with a salad or grilled vegetables.
Ingredients
- 1 large minute beef steak
- 1 tsp cumin seeds
- ½ tsp peppercorn
- 1 pinch of chilli flakes ( can be doubled)
- ¼ tsp turmeric powder
- 1 large garlic clove
- 1 large pinch of course salt
- 1.5 tbsp vegetable oil
Instructions
- Dry-roast the cumin seeds and peppercorns in a frying pan until fragrant. Transfer to a mortar and let them cool, then grind with a pestle.
- Add the other ingredients and pound to a coarse paste.
- Pat-dry the steak and rub it with the marinade. Chill or rest until you’re ready to grill/BBQ/griddle it.
- Heat the BBQ/grill or griddle pan. Sear the steak on each side, then flip over every 30 seconds. Cook it to your liking - it should not take more than 5 minutes.
- Rest for a few minutes before slicing.
