Background

I was given a bottle of Jack Daniels a couple of months ago; I was delighted because it's one of my favourite tipples, though a bit disappointed that it was only a half bottle. However, I had to hide my disappointed even more when I realized it was actually JD Tennessee Honey Barbecue Glaze! Anyway, I put it away and forgot about it - until last weekend when I was looking for something in which to cook some drumsticks & thighs, came across it again and decided I'd give it a go. This Jack Daniels Chicken Bake is the result and it turned out to be delicious - so good, in fact, that it pretty well made up for my initial disappointment! I'd be happy to serve it at a relaxed dinner party.

Ingredients

1 kg Free-Range Chicken Drumsticks & Thighs
1 onion, finely chopped
½ tsp garlic powder
1 Bottle Jack Daniel's Tennessee Honey Barbecue Glaze

Instructions

Preheat the oven to 180°C.
Place the chicken pieces in a suitably sized baking tin or dish.
Sprinkle the onions and garlic powder over the pieces.
Pour the JD sauce to cover all the pieces, then pop into the oven.
Bake for 20 minutes then turn on the grill to medium heat and cook for another 5-10 minutes until nicely browned.
Season to taste then serve with a crispy salad and boiled baby potatoes.
