LowCal Miso Vegetable Soup
Background
If you are watching the calories but need something filling, warming and tasty to help you through the winter months then this LowCal Miso Vegetable Soup fits the bill! Celeriac is a wonderful vegetable that's really popular in France but rather overlooked elsewhere - it has a great flavour and gives real body to this soup but is still only 18kCal/100g. The complete soup as below works out at less than 20kCal/100g. If you're not using a pressure cooker you'll need about 25 minutes simmering, stirring regularly.
Ingredients
- 10g oil spray (10 kCal)
- 250g Leeks (55 kCal)
- 1 Clove Garlic (4 kCal)
- 100g Mushrooms (13 kCal)
- 150g Celery (11 kCal)
- 650g Celeriac (117 kCal)
- 300g Cabbage Savoy (72 kCal)
- 500g Swede (125 kCal)
- 10g Miso paste (21 kCal)
- 1 litre Veg Stock (50 kCal)
Instructions
- Peal & cut the vegetables appropriately.
- Squirt oil 10 times into the pan.
- Add the leeks, garlic & mushrooms. Stir for a couple of minutes to release their juices.
- Put in the other vegetables and combine. Pour in the miso sauce and stock.
- Bring up to pressure. Cook for 10 minutes then allow to cool.
- Use a blender to create a potage, then serve scattered with whatever fresh herbs you have to hand.
