Background
Marinated olives can be so expensive in the supermarkets. Luckily it’s incredibly easy to make your own. These marinated olives with gherkins is a spicy version – leave out the chilli if you don’t like the heat.
Ingredients
- 1 jar green pitted olives in brine (300g)
- 1 red chilli
- 1 small red onion
- 2 cloves of garlic
- ½ red pepper
- 1 tsp dried oregano
- 2 Tbsp white wine vinegar
- Juice of 1 Lemon
- 4 Tbsp olive oil
- 2 gherkins
- Ground peppercorn
Instructions
- Drain the olives and but them in a bowl.
- Cut the chilli in half, remove & discard the seeds, stem and veins. Chop the flesh, add these to the olives.
- Finely chop the garlic, onion and red pepper, add these to the olives, together with the oregano.
- Add the vinegar, lemon juice and olive oil.
- Cut the gherkins into thin slices and add these to the olives. Season to taste with salt and ground peppercorn.
- Mix well and transfer the olives and the marinade into a sterilized jar, then seal.
- Marinate in the fridge for at least 2 hours, preferably overnight. Keep chilled after opening.
