Minty green pea burgers

Background
These vegetarian minty pea burgers can easily be vegan if you make them with flax-egg. For a gluten-free version use gluten-free breadcrumbs and buns (or chickpea flour for the patties). Serve them with your favourite condiments and toppings.
Ingredients
- 1.5 cups frozen green peas (thawed)
- 1 shallot, chopped
- 1 clove of garlic, chopped
- 1 handful mint
- 1 egg or flax egg
- 1 cup breadcrumbs (can be gluten-free)
- 2 pinches of dried chilli flakes (optional)
- Salt and pepper
- Burger buns
- Fillings, toppings and condiments of your choice
Instructions
- Put the peas, shallot, garlic, egg and mint in a food processor, then until you get a coarse mixture. Transfer it to a bowl and add breadcrumbs. Season with salt & pepper and add the chilli flakes if used. Form 4 patties and cool them until youβre ready to fry them.
- Heat some oil in a large non-stick frying pan. Cook the patties until golden and crispy, about 4 minutes on each side.
- Meanwhile, cut the buns in half and toast them gently.
- Assemble the burgers, adding lettuce, cucumber, roasted red pepper, onion, tomato etc slices and condiments of your choice.
- Serve warm.
