Miso glazed grilled pork ribs

Background
You can make these Miso glazed grilled pork ribs in two stages - first you steam the ribs, then they can be chilled until the grilling. So they are perfect for parties, particularly on New Year's Eve and during the Lunar New Year festivities. Serve them with steamed rice or mashed sweet potatoes and a crunchy salad.
Ingredients
- 2 Tbsp miso paste
- 4 Tbsp soy sauce (Kikkoman)
- 1 tsp cane or palm sugar
- 2 Tbsps rice vinegar
- 1 inch fresh ginger, finely grated
- 1 garlic clove, grated (optional)
- 1 teaspoon sesame oil
- 12 pork ribs
Instructions
- Combine the miso, soy, sugar, vinegar, ginger, garlic and oil in a small bowl.
- Place a steamer basket or bamboo steamer in a large saucepan. Pour water in the pan, underneath and up to the steamer.
- Place then ribs on plate. Brush them with one-third of the miso mixture then put them in the steamer basket. Cover the pan and bring to a simmer over medium heat. Steam for 30 minutes or until the ribs are tender. Keep adding water to the pan every 10 minutes (not touching the meat).
- Remove the ribs to a plate. (When cooled the can be placed in the fridge or grilled immediately.)
- When youβre ready to grill, preheat BBQ or griddle pan. Brush the remaining glaze over the ribs. Grill them for 3-5 minutes each side until sticky and golden.
- Serve warm or at room temperature.
