Background

This mixed tomatoes and feta salad is a lovely dish in a meze or makes an excellent filling in pita or can be served with grill/barbecued meat. I served it on garlic-brushed sourdough toasts, it was truly lovely and fresh!

The Recipe

Ingredients

  • 1 handful red cherry tomatoes on the vine
  • 1 handful red cherry tomatoes on the vine
  • ½ red onion
  • 1 handful black olives, pitted
  • 2 pinches of dried oregano
  • 2 Tbsp olive oil
  • 1 Tbsp white wine vinegar
  • 50g feta
  • 2 Tbsp chopped dill
  • Salt and pepper

Instructions

  • 1. Cut the tomatoes in half then thinly slice the onion. Scatter them into a bowl, then add the olives.
  • 2. Drizzle the oil and vinegar on top, then add the oregano. Combine well.
  • 3. Crumble the feta the scatter the dill on top. Toss. Taste and season with salt, if needed.
  • 4. Serve within 10 minutes.
