Mixed vegetable stew with broccoli

Background
Most supermarkets sell premixed pulses, rice, and pearl barley called “soup mix”. You can make simple, healthy and hearty soups and stews with this, like my mixed vegetable stew with broccoli. If you have a pressure cooker, you could reduce the cooking time by half ( but add the broccoli after cooking the stew under pressure otherwise it will become mushy). Serve it with crusty bread.
Ingredients
- 1 Tbsp olive oil
- 1 onion
- 3 cloves of garlic
- 2 carrots
- 1 medium sweet potato
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 200g soup mix (pre-soaked)
- 350 ml passata
- 1 litre vegetable stock
- 1 broccoli
- 1 handful coriander leaves, chopped
Instructions
- Pre-soak the soup mix overnight.
- Finely slice the onion and chop the garlic.
- Peel the carrot, sweet potato then chop them into bite-sized chunks.
- Heat the olive oil in a big pot.
- Gently sauté the onion for about 5 minutes, until tender. Add the chopped vegetables, garlic & spices, then cook for a minute. Stir in the spices then the passata.
- Drain the mixed pulses and add to the pot. Pour in the stock and bring to a boil.
- Put the lid on, turn down the heat and simmer gently for about 40 minutes, until the sauce has reduced and the barley & rice have cooked through.
- Meanwhile, chop the broccoli.
- Add the broccoli to the stew. Add more water/stock, if it’s too thick. Cook for 15 more minutes, then stir in the coriander leaves.
- Serve warm.
