Background
These little rolls are brilliant Italian antipasti. Perfect for parties, picnics or as nibbles with a glass of Prosecco. Assolutamente perfetto!
Ingredients
- 150g mozzarella balls (Bocconcini)
- 2 small zucchini (courgette)
- 4 sprigs of mint
- 80 ml of olive oil
- 1 clove garlic, pressed
- 1 tsp crushed coriander seeds
- 1 Tbsp grated lemon zest
- Coarse salt and ground pepper (to taste)
Instructions
- Using a vegetable peeler, slice the zucchini into thin strips.
- Drain the mozzarella balls then roll them up in the zucchini slices.
- Place the rolls close to each other in a sterilized , sealable jar - putting one mint leaf between each.
- Mix the remaining ingredients and pour over the rolls.
- Seal the jar and marinate in the fridge, ideally for 3 days - then consume it within a week.
- Serve them with cocktail sticks.
