Background
Mulled wine is not only one of the most delicious winter drinks, but it can also be used to make wonderful desserts. One such treat is this Mulled Wine Jelly, which requires no baking and very little work. It’s not only simple to prepare, but the jelly can be made 1–2 days in advance, so on the day of serving you only need to focus on decoration. This makes it an excellent dessert for welcoming guests — and it looks beautiful too.

- You can use leftover mulled wine for this recipe.
- If you're short on time, ready-made whipped cream works as well.
- A wonderful guest-friendly dessert— fits perfectly in a Christmas menu.
- Great for parties too, since it can be prepared in advance; simply pour into mini plastic cups.
- You can add fruit pieces to the mulled wine—such as blueberries, blackberries, raspberries, or even canned fruits.
- Any leftovers can be used to make a trifle!
Ingredients
- For the jelly:
- 10 sheets gelatin
- 500 ml red wine
- 300 ml orange juice
- 3 Tbsp honey
- 2 strips lemon peel
- 1 stick cinnamon
- 5 cloves
- For the whipped cream:
- 1 vanilla bean
- 150 ml double cream
- 2 Tbsp powdered sugar
Instructions
- Soak the gelatin sheets in 3–4 Tbsps of water for 5 minutes.
- Bring the wine, orange juice, honey, lemon zest, and spices to a boil. Once it reaches boiling point, remove from heat and strain.
- Remove the gelatin sheets from the water, shake off the excess liquid, and place them into the hot mulled wine mixture. Stir until completely dissolved.
- Pour the mixture into wine glasses (or small plastic cups). Let it rest in a cool place for 4 hours.
- About an hour before serving prepare the whipped cream: split the vanilla bean and scrape out the seeds. Add them to the cream along with the sugar and beat until fluffy (but not stiff).
- Spoon some whipped cream over the set jelly and chill.
- Cut the vanilla pod into thin strips and use them as decoration.
- Serve chilled.
