New potato salad with mackerel

Background
This new potato salad with mackerel is an ideal dish for the summer. You can eat it as a main meal or serve at a BBQ with grilled fish, or take it with you to a picnic or as a snack. It's very tasty and very easy to make.
Ingredients
- 750g new potatoes
- 50g rocket (arugula)
- 250g smoked mackerel fillets
- 1 shallot onion
- 2 Tbsp chopped chives
- Dressing:
- 2 Tbsp wine vinegar
- 2 Tbsp olive oil
- 1 tsp mustard
- 1 tsp honey
Instructions
- Rub the dirt off the new potatoes, then cook them in salted water until tender (10-15 mins).
- Finely chop the shallot onion.
- Mix the dressing, season with salt and pepper. Taste and adjust the honey, mustard and oil to your liking.
- Shred the fish in pieces.
- Drain the cooked potatoes and put them in a mixing bowl. Add the fish pieces, chopped onion and chives. Drizzle the dressing on top. Toss and season to taste.
- Just before serving fold in the rocket leaves.
