New potatoes with spinach

Background
You can serve these new potatoes with spinach as a vegan meal or on the side of grilled fish, steak, chicken or sausages.
Ingredients
- 300g new potatoes
- 1 Tbsp olive oil
- ½ chilli
- 2 cloves of garlic
- 100g baby spinach
- ½ lemon, zester and juice
Instructions
- Rub and wash the potatoes, then put them in a pan of water. Bring it to the boil. Cook for about 10-15 minutes until tender, then drain and keep the potatoes warm.
- Meanwhile, peel and thinly slice the garlic cloves. Slice the chilli too (remove the seeds and veins if you don’t want it spicy).
- Rinse the spinach under running water, then drain.
- Heat the oil in a large frying pan and fry the garlic and chilli for a few seconds. Add the spinach and lemon juice. Put a lid on, turn down the heat, and let it steam.
- Meanwhile cut the potatoes into bite-sized pieces.
- When the spinach has wilted, add the potatoes and the lemon zest. Season to taste with salt and pepper. Combine everything together.
- Serve warm.
