Oat and raisins pancakes

Background
These oat and raisins pancakes are dairy-free and gluten-free too, if appropriate oats are used. They are sugar-free too, so quite a healthy choice for breakfast or snacks. Serve them with maple syrup, fruit compote or your favourite toppings.
Ingredients
- 2 eggs
- 2 cups porridge oats
- 1 tsp baking powder
- Β½ cup oat yoghurt
- Β½ cup oat milk
- 1 tsp vanilla essence
- 1 pinch cinnamon
- 1 tsp oil
- Β½ cup raisins or sultanas
Instructions
- Put all ingredients (except the raisins) in a blender and pulse until you gate a thick, smooth batter. Add more oat milk if it's too thick. If you have time, rest for 15 minutes.
- Stir in the raisins, then heat a lightly oiled pancake pan, and spoon batches of the batter onto it (you can use silicon or metal pancake moulds).
- Cook the pancakes on both sides for a minute or so until golden brown.
- Serve the pancakes warm or at room temperature with your favourite sauce.
