Background

I normally grill or roast courgette, but this time I wanted a quick side-dish that could be cooked on the hob. So I created this easy, pan-fried balsamic courgette and tomato, which can be served on a piece of toast, with pasta or gnocchi; or on the side of fried/grilled/roast meat and fish.

Ingredients

1 courgette
1 handful baby tomatoes
1 bunch spring onions
1 clove of garlic, minced
1 tsp dried marjoram or oregano
2 Tbsp Balsamic vinegar
Oil, salt and pepper

Instructions

Cut the courgette into rounds, the tomatoes in half. Thinly slice the spring onions.
Heat the oil in a saucepan and fry the courgette for 5 minutes, or until they are getting brown.
Stir in the tomatoes, spring onions, garlic and oregano, then season with salt and pepper. You can add a pinch of chilli flakes for a spicy version.
Sauté, under cover, over low heat for 5 minutes.
When the tomatoes start releasing their jus, add the balsamic vinegar.
Let the vegetables caramelise, then serve
