Pasta with ricotta and crayfish
Background
I must say I'm hooked on crayfish tails. I always buy a pack when I go to Lidl because it's such good value and it's so useful to have around for quick and easy dishes! This pasta with ricotta and crayfish tail is a good example - perfect for busy or lazy days. You can use fresh, dry or gluten-free pasta of any shapes.
Ingredients
- 200g pasta
- 120g cleaned crayfish tails
- 125g ricotta
- 1 lemon
- Drop of olive oil
- 2 Tbsp chopped chives or dill
Instructions
- Cook the pasta according the packaging instructions.
- Meanwhile mix the ricotta with the zest and juice of the lemon. Add some oil and the chopped herbs. Taste and adjust to your liking.
- Drain the pasta and toss with ricotta mixture.
- Season to taste, and fold in the crayfish tails.
