Pasta with vegan meatballs and sweet potato sauce

Background

I made this dish with ready-to-cook vegan meatballs I bought at the supermarket. Also, I pre-cooked the sweet potato sauce (see recipe here), so basically it took me 10 minutes to create the dish. Serve this pasta with vegan meatballs and sweet potato sauce with a crispy salad.

Ingredients

½ portion of sweet potato pasta sauce
300g pasta of your choice (I used gluten-free)
16 meatballs (vegan)
1 cup peas, spinach or kale - optional
Vegan cheese of your choice, grated

Instructions

First make the sauce, blend and let it cool.
Cook the pasta according to the packet instructions, then drain and keep warm.
Heat half of the pasta sauce in a shallow pan, add your chosen green vegetable (if used). You might need to add a drop of water, if the sauce is too thick.( Keep the other half of the sauce for another meal in the fridge.)
After 5 minutes, fold in the pasta and warm through.
Serve with grated vegan cheese and a squeeze of lemon juice and/or a pinch of dried chilli flakes.
