Pasta with vegan meatballs and sweet potato sauce

Background
I made this dish with ready-to-cook vegan meatballs I bought at the supermarket. Also, I pre-cooked the sweet potato sauce (see recipe here), so basically it took me 10 minutes to create the dish. Serve this pasta with vegan meatballs and sweet potato sauce with a crispy salad.
Ingredients
- ½ portion of sweet potato pasta sauce
- 300g pasta of your choice (I used gluten-free)
- 16 meatballs (vegan)
- 1 cup peas, spinach or kale - optional
- Vegan cheese of your choice, grated
Instructions
- First make the sauce, blend and let it cool.
- Cook the pasta according to the packet instructions, then drain and keep warm.
- Heat half of the pasta sauce in a shallow pan, add your chosen green vegetable (if used). You might need to add a drop of water, if the sauce is too thick.( Keep the other half of the sauce for another meal in the fridge.)
- After 5 minutes, fold in the pasta and warm through.
- Serve with grated vegan cheese and a squeeze of lemon juice and/or a pinch of dried chilli flakes.
