Prawns and amaranth stalk stew

Background
An easy and tasty recipe prepared with the combination of mature stalks of amaranth leaves that is packed with protein and nutrients. This is undoubtedly a remarkable recipe that tastes tangy, spicy, and sweet along with a pure earthly taste.
Ingredients
- 250 gms prawns
- 1 cup chopped tender amaranth stem
- Β½ cup tamarind pulp
- 2 medium sized onions chopped
- 4 green chillies slit and cut
- A pinch turmeric powder
- 1 tsp red chilli powder
- 1 Tbsp oil
- Β½ tsp black pepper powder
- Β½ tsp ginger garlic paste
- Β½ tsp cumin powder
- Β½ tsp coriander powder
- 1 spring curry leaves
- 1 Tbsp chopped coriander for garnishing
- Salt to taste
Instructions
- Clean and wash prawns. Remove fiber from amaranth stalk and cut into pieces.
- Heat oil in a pan, add chopped onion curry leaves, green chilli and ginger garlic paste and sautΓ© till onions are soft.
- Add prawns, salt, turmeric, red chilli, coriander, cumin and pepper powder. Mix well and sautΓ© for 2 minutes.
- Add amaranth stem and one cup of water. Cover and cook till well cooked.
- Add tamarind pulp and cook for another 5 minutes.
- Remove from heat and garnish with coriander leaves.
- Serve hot with steamed rice.
